What's a little variation worth?

In this case, a lot. The differences between these two dispensers may not seem great, but those little differences make a huge difference in the value of the dispensers. The top, Witch A, can bring as much as $250, where the bottom, Witch B, can bring as much as $4000. Easiest way for me to spot a Witch B is the much wider broom on the stem. Other differences that I can notice right away are the chin and the top of the hat, and in general, the Witch B's head is larger than that of the Witch A.
The most obvious and common variations are color variations. Easy to tell the difference between a yellow Mimic and a blue Mimic. Little harder to know whether you have a light blue, royal blue, or dark blue Mimic, because what is light blue to somebody, might look royal blue to someone else.

One of the real expensive variations of the Pony is the soft rubber mane variation. Really hard to tell if it is a soft rubber mane (left) or a plastic mane (right) from just a picture. The soft rubber manes should only come a Made in Yugoslavia stem. Also buyer-beware because some sellers will advertise the plastic mane as soft, because some of the plastic manes can be a little soft as well.

There are some dispensers, like Pinnocchio B that are available with a metal pin (left) or without (right). Some, like Pinocchio, doesn't really affect the value. Others, it can have a dramatic effect on the value. The Fat Ear Bunny with a metal pin brings alot more $$$ than the one without. Others that can be found with and without a metal pin include Santa A, Monkey Sailor, Little Lion, Donald Duck A, Mickey Mouse A, Popeye A and B, and the Golden Glow A.
